The recipe for manna with kefir in a slow cooker with the addition of carrots is my attempt to bake not only a tasty, but also a healthy tea pie with the help of my “kitchen assistant”. At first I wanted to cook it with apples, but there were no apples in the refrigerator, but there were carrots))).

Basically, we put vegetables in the first or second courses, in various fillings (such as, or) - carrots are appropriate there, but we somehow don’t associate vegetables with desserts. But in vain: carrots are so juicy and sweet, they just ask to be used in a sweet pie. And, by the way, it was carrots (along with honey) that were used as a sweetener for sweet baked goods in the era before the advent of sugar.

And manna in a slow cooker with carrots turns out very tasty and tender. And most importantly, the recipe for manna with kefir in a slow cooker does not require much expenditure, it is very easy to prepare. Well, and of course, manna with carrots is not only tasty, but also healthy))). Let our children eat carrots both raw and in the form of delicious baked goods.

To prepare manna in a slow cooker, you need:

  • Kefir – 1 glass;
  • Semolina – 1 glass;
  • Sugar – 1 glass;
  • Eggs – 3 pcs.;
  • Soda – ½ tsp;
  • Medium carrots – 1 pc.;
  • Flour – 1 glass;
  • Cinnamon – ½ tsp;
  • Salt – 1 pinch.

Cooking step by step:

In a bowl, mix kefir with semolina. Add sugar and salt and leave until the semolina swells, about 20-30 minutes.

Add eggs and beat the mixture well. Add finely grated baking soda, carrots and cinnamon.
Mix the mass thoroughly.

We sift the flour through a sieve in order to weed out foreign additives (sometimes these are found in flour), and also so that it is saturated with oxygen and our product turns out airy. And, once again, mix well so that there are no lumps left in the dough.

Cover the multicooker pan with parchment greased with butter.
If, instead of carrots, you use apples, then you need to chop them into small pieces and pour them onto parchment.
Pour the dough on top of them.
Turn on the multicooker in the “Baking” mode for 40 minutes, bake with the lid closed, but leave the valve open so as not to cook under pressure.
After the sound signal, we do not open the multicooker, but let it sit for 15 minutes, and only then open the lid and take out the manna.

I have always been quite skeptical about carrot cakes, as a culinary counterfeit. Carrot cake? Hmm... These are something like “guess what” recipes? Well, or baked goods born from the desire to feed your loved ones carrots at any cost, because they contain vitamin A?
In general, the main idea of ​​carrot creativity seemed to me to be to fill the taste of the main ingredient with different spices and amaze the family or employees at work with this riddle, who would shake their heads and agree: “yes, indeed, it’s not clear from what.”

This is a meatless, vegetarian carrot cake with semolina. Flour with juicy carrots gives a strong stickiness, so carrot pies are often made either 50/50 with flour and semolina or simply with semolina, which gives the dough a pleasant loose structure. My pie is pure manna. Very tasty and original. Don’t be embarrassed that it’s lean - it’s amazingly tasty and harmonious, I bake it all year round. Fragrant, juicy, similar to an oriental sweet soaked in syrup. You need to take strong and juicy carrots; if you use wilted ones, you need to add additional water to the dough. The pie is eggless and flourless, so I recommend cooling it before cutting into portions. Cardamom is very important for the aroma; nothing can replace it; cardamom goes well with carrots and does not overwhelm them. I also add lemon zest and vanilla sugar to the dough. I do not recommend adding other spices (cloves, cinnamon).

Ingredients:

    For a mold with a diameter of 26cm:
  • 450g raw peeled carrots (or 550 unpeeled)
  • 150 ml refined vegetable oil
  • 200g sugar
  • 300g dry semolina
  • 1 lemon
  • 100g raisins
  • 150g water
  • 1 packet vanilla sugar
  • 3 cardamom seeds (or 3 pinches of ground)
  • 0.5 tsp soda

Turn on the oven at 180C.
Carrots must be clean and peeled.

Grind the carrots in a processor (you can grate them on a fine grater).

Sort the raisins and rinse with cold water. There is no need to soak the raisins.

Wash the lemon well and remove the zest using a fine grater.

Squeeze juice from half a lemon.
You will also need the second half of the lemon; we will use it to extinguish the soda later.

Grind cardamom grains in a coffee grinder.
To help your coffee grinder better grind the cardamom instead of just swirling it around in the bowl, add a couple of tablespoons of sugar to the grinder.

Knead the dough:
Combine carrots, zest and lemon juice, sugar and vanilla sugar, chopped cardamom in a bowl.
Add 150 ml water.

Mix well and leave the mixture for 5 minutes so that the carrots release their juice.

Pour in 150 ml of refined oil.

Add raisins. Mix.

Add all the semolina.

Mix well and leave for 10 minutes so that the semolina swells a little.

Who among us doesn’t like to have a cup of tea with something sweet in the evening? Let's face it, we all do this sometimes. And instead of eating sweets and chocolates, many bake pies, buns and cakes. Made with your own hands, they give a special home comfort, and their taste is more pleasant.

As you may have noticed, we will cook with kefir. This will make the cake more tender and fluffy. Kefir also interacts well with baking powder.
Butter can be replaced with margarine if desired.
We take fresh carrots; there is no need to boil them in advance, they will cook perfectly during baking. The amount of carrots varies depending on your desire. Remember that it is not very sweet, so you can still take it in a smaller size. But just don't add too much sugar. Everything should be in moderation.

Preparing the dough

Sometimes you can find recipes for semolina, where the basis is flour and semolina in a 1:1 ratio. But better taste and results can be achieved using only semolina.

1. Let's start by preparing the liquid part of our dough. To do this, take a deep bowl and a blender or mixer. Beat sugar with eggs.

2. Next we need to mix this egg mass with butter or margarine. To do this, it would be best to defrost it first or layer it on thin plates and beat everything well again with a mixer. It is better not to pour in melted hot butter, as this can lead to the coagulation of the protein.

3. The last liquid component is kefir. Just pour it in and mix the liquid for homogeneity.

4. Now you need to pour semolina into all this and mix well. The most important thing in manna recipes is to let the cereal brew. It must absorb some of the liquid, swell and increase in volume. Otherwise, you risk getting something other than a pie.

5. You may ask a very reasonable question: when should you add carrots? Now it's her turn. The vegetable needs to be washed and peeled, and then chopped into a puree on the smallest grater.

And this puree, along with vanilla and a packet of baking powder, needs to be mixed with the dough.

6. Now let's leave it to rest for half an hour.

Baking a pie

All baking rules come down to temperature, cooking time and shape.

1. The temperature will be standard - 180 degrees. You need to place the pie in a preheated oven, so turn it on to warm up as soon as you prepare the dough.

2. An important element is also the shape of the baked goods. It’s more likely not even she herself, but the way she was prepared. If the mold is silicone, then you don’t need to do anything, in this regard it is simply ideal. It is better to grease a metal mold with oil or sprinkle with flour. You can also line it with baking paper.

3. Pour the risen dough into the mold and level it out. Before doing this, make sure that the carrot puree is distributed evenly. And you can remove the pie to bake for about 30 minutes.

4. Once it has a nice golden color, it will be ready. When serving, you can sprinkle with powdered sugar.

Transfer the dough into the multicooker bowl.

Close the appliance and set the “Bake” mode for 65 minutes.
